It’s simply delish!
4-5 Heirloom tomatoes
Fleur de sel, to taste
Freshly cracked black pepper, to taste
Olive & Kickin’s awesome Tuscan Herb olive oil
Provolone or Mozzarella cheese (feel free to use soy cheese if you like)
Artisan bread of choice (Might I suggest a seeded loaf?)
Olive & Kickin’s Dark Cherry balsamic vinegar
Preheat oven to 325 degrees. Slice tomatoes into half-inch slices. Drizzle with Tuscan Herb olive oil and sprinkle with fleur de sel and black pepper to taste. Roast the tomato slices for approximately 45 minutes. Remove from oven. Place the dark cherry balsamic vinegar in a pan and simmer gently for about 10-12 minutes. Toast one side your artisan bread, in a pan, with a bit more of the olive oil. As the bread is toasting, begin building your sandwich by spreading the top of each slice of toasting bread with mayo, then topping each with cheese, the roasted tomatoes, and fresh basil. Once the toasted side of the bread has reached a nice golden brown, put the two halves together, thus creating one sandwich. Drizzle the top of your masterpiece with the dark cherry balsamic reduction. Serve warm.
Note: You will have roasted tomatoes leftover to build another sandwich. The amount of tomatoes makes 2-3 sandwiches, depending on size.
